So many great suggestions. I always think of white burgundies (and especially Chablis) as having that beautiful saline/briny finish. There are some nice Chards in the Finger Lakes that have that same note: thinking in particular of Living Roots and Ravines, but there are others too. Can't wait to try some of these!
